Ingredients

  • 1 c. cream style corn
  • 1 1/2 c. self-rising flour
  • 1 tsp. flour to dust pan
  • pinch of salt
  • 1 c. buttermilk
  • 1/2 c. oil
  • 1/2 c. chopped green peppers
  • 3 or 4 chopped green onions
  • 2 or 3 chopped jalapeno peppers
  • 2 eggs
  • cheese for top and bottom of batter or in batter

Method

  • Combine all ingredients mixing well.
  • Use about 1/2 c. cheese for top and bottom of batter and about 1/2 c. in mix with other ingredients.
  • Pour batter in well oiled 8 or 9 inch iron skillet. Bake at 425 degrees for 20 to 25 minutes.
