- 1 c. cream style corn
- 1 1/2 c. self-rising flour
- 1 tsp. flour to dust pan
- pinch of salt
- 1 c. buttermilk
- 1/2 c. oil
- 1/2 c. chopped green peppers
- 3 or 4 chopped green onions
- 2 or 3 chopped jalapeno peppers
- 2 eggs
- cheese for top and bottom of batter or in batter
Method
- Combine all ingredients mixing well.
- Use about 1/2 c. cheese for top and bottom of batter and about 1/2 c. in mix with other ingredients.
- Pour batter in well oiled 8 or 9 inch iron skillet. Bake at 425 degrees for 20 to 25 minutes.
