Ingredients
- 1 lb. ground beef (extra lean)
- 1/4 c. chopped onion
- 2 Tbsp. chopped jalapenos or 2 Tbsp. chopped green chiles
- 2 eggs, beaten
- 1 can cream-style corn
- 2/3 c. milk (2%)
- 1 envelope corn bread mix
- 6 oz. Cheddar cheese, grated
Method
- Preheat oven to 425°.
- Brown ground beef until crumbly, draining off any excess fat.
- Add onions and jalapenos.
- Combine eggs, 1 cup of corn and milk and add to corn bread mix; stir just until dry ingredients are moistened.
- Pour half of corn bread batter into greased 9-inch square pan.
- Top with beef mixture, cheese and remaining corn.
- Pour onto half of corn bread batter on top.
- Bake for 25 to 30 minutes.
- Will serve approximately 8 people.
