Ingredients

  • 1 lb. ground beef (extra lean)
  • 1/4 c. chopped onion
  • 2 Tbsp. chopped jalapenos or 2 Tbsp. chopped green chiles
  • 2 eggs, beaten
  • 1 can cream-style corn
  • 2/3 c. milk (2%)
  • 1 envelope corn bread mix
  • 6 oz. Cheddar cheese, grated

Method

  • Preheat oven to 425°.
  • Brown ground beef until crumbly, draining off any excess fat.
  • Add onions and jalapenos.
  • Combine eggs, 1 cup of corn and milk and add to corn bread mix; stir just until dry ingredients are moistened.
  • Pour half of corn bread batter into greased 9-inch square pan.
  • Top with beef mixture, cheese and remaining corn.
  • Pour onto half of corn bread batter on top.
  • Bake for 25 to 30 minutes.
  • Will serve approximately 8 people.
