Ingredients

  • 1 pound grnd beef, browned & liquid removed
  • 1 (17 ounce.) can corn, liquid removed
  • 1 (15 ounce.) can tomato sauce
  • 1 c. Pace Picante Sauce
  • 1 tbsp. chili pwdr
  • 1 1/2 teaspoon cumin
  • 1 (16 ounce.) carton low fat cottage cheese
  • 2 Large eggs, slightly beaten
  • 1/4 c. Parmesan cheese
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic salt
  • 1 pkg. tortillas, at least 12

Method

  • Combine first 6 ingredients, simmer 5 min.
  • Arrange 6 tortillas on bottom and sides of lightly grease 13"x9"x2" baking dish, overlap as necessary.
  • Top with half meat mix.
  • Spoon cheese mix over meat.
  • Arrange remaining tortillas over cheese mix.
  • Top with remaining meat mix.
  • Bake in preheated 375 degree oven about 30 min.
  • Remove from oven, sprinkle with 1 c. shredded cheddar cheese.
  • Let sit 10 min.
