Ingredients

  • 4 or 5 potatoes, sliced
  • 1/2 c. shortening or oil
  • 1 c. sliced onions
  • 2 tsp. salt
  • 1/4 tsp. black pepper

Method

  • Heat shortening or oil in heavy skillet over low heat.
  • Arrange a layer of sliced potatoes and sliced onions; repeat.
  • Sprinkle with salt and pepper.
  • Cover tightly.
  • Cook over low heat for 15 minutes.
  • Uncover and increase heat slightly; saute for 10 minutes longer or until potatoes are crisp and brown on underside.
  • Do not stir.
  • Fold in half as with an omelet.
  • Serve on a hot platter.
