Ingredients
- 4 flour tortillas
- 1 cup cooked brown rice
- 14 cup diced cucumber
- 14 cup chopped scallion
- 1 large tomatoes, chopped
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
Method
- In a large bowl, combine all ingrediants and salt and pepper to taste.
- Mix well, cover and refridgerate for at least an hour.
- Divide mixture evenly among the tortillas, fold ends and roll up.
- May be prepared ahead.
