Ingredients

  • 1 cup Long Grain Rice
  • 1 cup Orzo Pasta
  • 2 Medium Tomatoes
  • 1 English Cucumber
  • 1 scoop Lemon
  • 2 1/2 tablespoons Mediterranean Spice Mix
  • 3 tablespoons Olive Oil
  • 1.5 teaspoons Salt

Method

  • In a medium skillet heat 1 Tbsp Olive Oil. Add rice and orzo and saute until lightly toasted. Add 2 3/4 cups water, 3/4 tsp. salt and 1 tbsp. of the spice mix. Bring to a boil. Cover reduce heat to low and simmer for 15 minutes or until liquid is absorbed and rice is tender.
  • Dice cucumber and tomatoes in 1/4" pieces and set aside until rice and pasta have cooled completely.
  • Add cooled rice and pasta to a large bowl along with tomatoes and cucumber, juice and zest of one lemon, remaining spice mix, 2 tbsps. olive oil. Toss well.
  • Serve at room temperature or slightly chilled.
