Ingredients
- 1 cup Long Grain Rice
- 1 cup Orzo Pasta
- 2 Medium Tomatoes
- 1 English Cucumber
- 1 scoop Lemon
- 2 1/2 tablespoons Mediterranean Spice Mix
- 3 tablespoons Olive Oil
- 1.5 teaspoons Salt
Method
- In a medium skillet heat 1 Tbsp Olive Oil. Add rice and orzo and saute until lightly toasted. Add 2 3/4 cups water, 3/4 tsp. salt and 1 tbsp. of the spice mix. Bring to a boil. Cover reduce heat to low and simmer for 15 minutes or until liquid is absorbed and rice is tender.
- Dice cucumber and tomatoes in 1/4" pieces and set aside until rice and pasta have cooled completely.
- Add cooled rice and pasta to a large bowl along with tomatoes and cucumber, juice and zest of one lemon, remaining spice mix, 2 tbsps. olive oil. Toss well.
- Serve at room temperature or slightly chilled.
