Ingredients
- 1 lb. bacon
- 1 bunch green onions
- 1/2 lb. mushrooms
- 1 doz. eggs
- 1/2 c. water
- 1 small can mild green chilies, chopped
- 1 lb. medium Cheddar cheese, grated
- 1/2 tsp. garlic powder
- salt and pepper
Method
- Place 2 tablespoons oil in Dutch oven. Dice onions and mushrooms; add to the oven.
- Chop bacon; add to Dutch oven and cook
- until
- bacon is
- crisp.
- Drain.
- Beat
- eggs,
- water and seasonings.
- Add
- drained
- chilies; pour over mixture in Dutch oven.
- Place
- on
- prepared coals
- until eggs are set.
- Stir 2 times,
- then
- add
- grated
- cheese over eggs.
- Put on preheated lid;
- cook over coals, just until cheese has melted.
- Cut into wedges; serve with salsa.
