Ingredients

  • 1 lb. bacon
  • 1 bunch green onions
  • 1/2 lb. mushrooms
  • 1 doz. eggs
  • 1/2 c. water
  • 1 small can mild green chilies, chopped
  • 1 lb. medium Cheddar cheese, grated
  • 1/2 tsp. garlic powder
  • salt and pepper

Method

  • Place 2 tablespoons oil in Dutch oven. Dice onions and mushrooms; add to the oven.
  • Chop bacon; add to Dutch oven and cook
  • until
  • bacon is
  • crisp.
  • Drain.
  • Beat
  • eggs,
  • water and seasonings.
  • Add
  • drained
  • chilies; pour over mixture in Dutch oven.
  • Place
  • on
  • prepared coals
  • until eggs are set.
  • Stir 2 times,
  • then
  • add
  • grated
  • cheese over eggs.
  • Put on preheated lid;
  • cook over coals, just until cheese has melted.
  • Cut into wedges; serve with salsa.
