Ingredients

  • 2 c self-rising flour
  • 1 t salt
  • 4 T (2 oz) cold butter
  • 4 T (2 oz) goat cheese
  • 1 c buttermilk
  • 1 T butter for pan
  • melted butter to top biscuits
  • 1/4 c grated Parmesan cheese

Method

  • Preheat oven to 425* Place 10" cast iron pan into the oven while it is preheating. Place flour and salt in med bowl. Cut in the butter and goat cheese. Make a well in the center and pour in the milk, adding an extra tablespoon if needed.
  • Remove the hot skillet from the oven and place a tablespoon of butter into the pan. When the butter has melted, drop (1/4 c) scoopfuls of batter into the pan.
  • Brush the tops with melted butter. Bake 14-16 min, until browned on top and bottom. Remove from the oven and sprinkle with grated cheese. Enjoy warm!
