Ingredients

  • 2 lbs ground beef
  • 1 14 ounces Lipton Onion Soup Mix
  • 12 cup diced onion
  • 1 -2 garlic clove, minced
  • 14 teaspoon pepper
  • 12 teaspoon salt
  • 2 eggs, beaten
  • 13 cup chili sauce
  • 1 serrano pepper, diced (optional)
  • up to 1 cup cracker, crushed
  • 23 cup chili sauce
  • 3 tablespoons wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 12 cup brown sugar, packed
  • 1 12 teaspoons brown mustard

Method

  • Preheat oven to 350F.
  • Saute onions, garlic, serrano pepper in 1 tbsp oil in a small pan until onions are translucent.
  • Mix the meatloaf ingredients together, mixing in the crackers last until desired consistency (use no more than 1 cup).
  • Shape the meatloaf mixture into a loaf and place in a lightly greased 9x13 baking dish.
  • Place meatloaf into oven and set timer for 60 minutes.
  • Mix sauce ingredients together in a small saucepan, bring to boil and simmer for 5 minutes.
  • Baste meatloaf with sauce after first 15 minutes of cooking and every 15 minutes afterwards.
  • Bake meatloaf until internal temperature reaches 155 F (will rise to 160 F after removing from oven), about 45 min to 1 hr of cooking total.
  • Remove from oven and let rest for 5 minutes before slicing.
  • Serve meatloaf with remaining sauce.
