- 1/4 c. olive oil
- 2 c. chopped onions
- 1 c. chopped celery
- 1 c. grated carrot
- 1/2 c. chopped green pepper
- 2 to 3 cloves garlic
- 1/2 to 1 c. chopped mushrooms
- 1 bay leaf
- 2 tsp. oregano (dried)
- 1/2 tsp. dried basil
- 1/2 c. chopped parsley
- 2 c. drained, canned tomatoes or fresh
- 1 c. drained juice
- sugar and salt to taste (optional)
- tomato paste (optional)
Method
- Heat oil in saucepan.
- Saute onions, celery, carrots, green pepper, garlic and mushrooms until onions are very soft.
