Ingredients
- 1/2 c. vegetable oil
- juice of lemon or lime
- sliced onion
- 4 to 5 cloves of garlic
- 1 tsp. rosemary
- 1 tsp. thyme
- 1 bay leaf
- salt and pepper
- leg of lamb
Method
- Mix ingredients and pour over lamb.
- Turn from time to time, for about 2 hours or more.
- Roast in 325° oven for 25 minutes to the pound or internal meat thermometer at 175° to 180° for well done; 160° to 165° for slightly pink (very tender).
- Baste once or twice with marinade.
