Ingredients
- 3 c. cooked rice
- 2 eggs with 1/8 tsp. salt
- 1/2 medium onion
- 1/2 green pepper
- 2 small carrots
- 4 strips bacon *
- 3 Tbsp. oil
- 3/4 tsp. salt
- 1/4 tsp. Accent
- black pepper
Method
- Fry bacon.
- When done, remove bacon and pour off some of the grease; pour beaten eggs into pan and scramble; remove eggs.
- Add oil to pan and turn on high.
- Add diced onion.
- Stir 1 minute; add chopped green pepper and grated carrots.
- Quickly stir for 2 minutes.
- Return the eggs and crumbled bacon to pan.
- Stir briefly.
- Reduce heat to medium-high.
- Add rice and heat thoroughly.
- Add salt, Accent and black pepper.
- Mix well.
