Ingredients

  • 3 c. cooked rice
  • 2 eggs with 1/8 tsp. salt
  • 1/2 medium onion
  • 1/2 green pepper
  • 2 small carrots
  • 4 strips bacon *
  • 3 Tbsp. oil
  • 3/4 tsp. salt
  • 1/4 tsp. Accent
  • black pepper

Method

  • Fry bacon.
  • When done, remove bacon and pour off some of the grease; pour beaten eggs into pan and scramble; remove eggs.
  • Add oil to pan and turn on high.
  • Add diced onion.
  • Stir 1 minute; add chopped green pepper and grated carrots.
  • Quickly stir for 2 minutes.
  • Return the eggs and crumbled bacon to pan.
  • Stir briefly.
  • Reduce heat to medium-high.
  • Add rice and heat thoroughly.
  • Add salt, Accent and black pepper.
  • Mix well.
