Ingredients

  • 2 1/4 c. all-purpose flour
  • 1 Tbsp. double-acting baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 c. margarine
  • 1/2 c. sugar
  • 1 tsp. vanilla extract
  • 1 egg
  • 3/4 c. raisins
  • 3 ripe bananas, peeled and mashed

Method

  • Preheat oven
  • to 350°.
  • Spray a 9 x 5 x 3-inch loaf pan with nonstick
  • cooking
  • spray and set aside, or use tube pan. Into
  • a small mixing bowl sift together flour, baking powder, salt
  • and cinnamon.
  • Set
  • aside.
  • In
  • large
  • mixing
  • bowl, combine margarine and sugar.
  • Using electric mixer beat until creamy and light.
  • Add eggs and vanilla; beat until thoroughly combined.
  • Add sifted
  • ingredients alternately with
  • bananas, beating
  • gently after each addition.
  • (Do not overbeat as this will toughen bread.)
