Ingredients
- 6 (preferrably) russet baked potatoes
- 1/2 white onion diced
- 1/2 cup scallions diced
- 1/2 small green bell pepper diced
- 1/4 cup chopped parsley
- Mayo to coat all ingredients, 1/2-1 cup
Method
- Boil potatoes, about 30 min or until tender but not overly soft, drain, cool, remove skins & slice into a large bowl.
- Add onions, bell pepper, parsley and Mayo. Add salt & pepper to taste. Refrigerate.
