Ingredients
- 1 Tbsp. butter
- 1 c. sugar
- rind and juice of 1 lemon
- 2 rounded Tbsp. flour
- 1 1/2 c. milk
- 3 eggs, separated
- pinch of salt
Method
- Melt butter.
- Add flour and mix well.
- Add lemon juice and rind, salt, egg yolks, milk and sugar.
- Mix well.
- Beat egg whites and fold in last.
- Pour into unbaked pie shell.
- Bake at 325° for 40 to 45 minutes or try 350° for 35 minutes.
- Center should be firm.
