Ingredients
- 1 1/2 c. sugar
- 7 Tbsp. cornstarch
- dash of salt
- 2 Tbsp. butter
- 1 1/2 c. water
- 3 beaten egg yolks
- 1 tsp. lemon peel
- 1/2 c. lemon juice
Method
- Combine sugar, cornstarch and salt.
- Stir in water.
- Bring to boiling over medium heat, cook stirring constantly until thick, 3 to 5 minutes.
- Remove from heat and stir in beaten egg yolks.
- Cook 1 minute.
- Add lemon peel, butter and lemon juice.
- Stir until mixed.
- Pour in baked pie shell.
- Top with meringue.
- Bake at 350° until brown.
