Ingredients

  • 1 can diced tomatoes, undrained
  • 1 c. water
  • 3 Tbsp. quick-cooking tapioca
  • 2 tsp. sugar
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 lb. lean beef stew meat
  • 4 medium carrots, cut into 1 inch cubes
  • 3 medium potatoes, peeled and quartered
  • 2 celery ribs, cut into 3/4 inch chunks
  • 1 medium onion, quartered

Method

  • Combine the tomatoes, water, tapioca, sugar, salt and pepper in large bowl.
  • Add remaining ingredients; mix well.
  • Pour into greased 13 X 9 inch baking dish.
  • Cover and bake at 375 degrees for 1 3/4 to 2 hours.
