- Blueberry Coconut Banana Blueberry Loaf
- 1/2 cup organic coconut oil
- 1/3 cup coconut palm nectar
- 2 teaspoon vanilla extract
- 2 eggs
- 1 cup brown rice flour
- 3/4 cup tapioca starch
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2-3 large bananas
- 1/2 cup sour cream or milk
- 1 cup blueberries
- 3/4 cup shredded coconut flakes
Method
- Preheat the oven to 350 degrees.
- Combine the butter and sugar in a mixing bowl and beat. Then add dry ingredients. Should coat blueberries in flour before folding into loaf.
