Ingredients

  • Blueberry Coconut Banana Blueberry Loaf
  • 1/2 cup organic coconut oil
  • 1/3 cup coconut palm nectar
  • 2 teaspoon vanilla extract
  • 2 eggs
  • 1 cup brown rice flour
  • 3/4 cup tapioca starch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2-3 large bananas
  • 1/2 cup sour cream or milk
  • 1 cup blueberries
  • 3/4 cup shredded coconut flakes

Method

  • Preheat the oven to 350 degrees.
  • Combine the butter and sugar in a mixing bowl and beat. Then add dry ingredients. Should coat blueberries in flour before folding into loaf.
