- 1 c. dried lentils (unsoaked)
- 1 c. chopped onion
- 2 cloves garlic, minced
- 4 ribs celery, shredded or minced
- 2 carrots, shredded or minced
- 2 Tbsp. chopped, fresh parsley
- 3 c. fat free chicken broth
- 3 c. water
- 1 bay leaf
- 1/2 tsp. ground cumin
- pinch of dried thyme
- pinch of turmeric or curry powder (optional)
- salt and pepper to taste
- 2 Tbsp. lemon juice
- 1 c. diced, cooked chicken or turkey
Method
- It is not necessary to presoak lentils before using them. Simply combine all ingredients, except lemon juice and poultry meat.
- Cover and simmer 50 to 60 minutes.
- Stir in lemon juice and chicken.
