Ingredients

  • 1 c. dried lentils (unsoaked)
  • 1 c. chopped onion
  • 2 cloves garlic, minced
  • 4 ribs celery, shredded or minced
  • 2 carrots, shredded or minced
  • 2 Tbsp. chopped, fresh parsley
  • 3 c. fat free chicken broth
  • 3 c. water
  • 1 bay leaf
  • 1/2 tsp. ground cumin
  • pinch of dried thyme
  • pinch of turmeric or curry powder (optional)
  • salt and pepper to taste
  • 2 Tbsp. lemon juice
  • 1 c. diced, cooked chicken or turkey

Method

  • It is not necessary to presoak lentils before using them. Simply combine all ingredients, except lemon juice and poultry meat.
  • Cover and simmer 50 to 60 minutes.
  • Stir in lemon juice and chicken.
