Ingredients

  • 1 1/2 c. dried beans
  • 1/4 c. chopped onions
  • 2 Tbsp. dark molasses
  • 2 or 3 Tbsp. catsup
  • 1 Tbsp. dry mustard
  • 1 tsp. salt
  • 1/2 c. boiling water or beer
  • 1/2 tsp. vinegar
  • 1 tsp. curry powder
  • 1 Tbsp. Worcestershire sauce
  • 1/4 lb. sliced salt pork

Method

  • Cover beans with water and bring to a boil.
  • Simmer slowly for 1/2 hour or more until tender.
  • Preheat oven to 250°.
  • Drain the beans, reserve the cooking water and add onions, molasses, catsup, dry mustard, salt, bean water or beer, vinegar, curry powder and Worcestershire sauce.
  • Place in a greased casserole.
  • Decorate with sliced salt pork.
  • Bake covered for 6 to 9 hours.
  • If they become dry, add well seasoned stock or reserved bean water.
  • Uncover for the last hour of cooking.
