Ingredients

  • 1/3 c. uncooked wild rice
  • 2 c. water
  • 1/2 c. diced celery
  • 1/4 c. diced onion
  • 1 small carrot, shredded
  • 6 Tbsp. butter or margarine
  • 1/2 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 1 tsp. Nature's Seasons
  • 1/2 c. chopped green pepper
  • 1/4 c. sliced fresh mushrooms
  • 4 c. chicken broth
  • 1 c. cooked chicken, cut up
  • 1 c. half and half

Method

  • Wash rice with cold water; drain and cook in 2 cups water until tender (45 minutes).
  • Saute celery, onion, green pepper, mushrooms and carrot in butter until tender.
  • Add 1/2 cup flour and cook and stir 1 minute.
  • Add broth and chicken.
  • Bring to a boil and add rice, salt, pepper and Nature's Seasons.
  • To serve, heat soup mix and stir in 1 cup half and half.
  • Serve hot.
