- 36 med. shrimp, cooked. approx. 1 lb.
- 1 Tbsp. olive oil
- 2 c. red bell pepper strips
- 1 c. green bell pepper strips
- 1/4 c. chopped parsley
- 1 Tbsp. chopped scallion
- 2 cloves garlic minced
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. balsamic vinegar
- 2 tsp. dried basil, or 1/4 cup fresh, finely chopped
Method
- In a large non stick skillet at medium heat, warm the olive oil.
- Add peppers and 2 Tbsp. parsley, scallion and garlic.
- Saute until vegetables are tender, 4 to 5 minutes.
- Add shrimp, lemon juice, vinegar and basil.
- Stir fry one or two minutes.
- Sprinkle with remaining parsley.
- Serves 6.
