Ingredients

  • 36 med. shrimp, cooked. approx. 1 lb.
  • 1 Tbsp. olive oil
  • 2 c. red bell pepper strips
  • 1 c. green bell pepper strips
  • 1/4 c. chopped parsley
  • 1 Tbsp. chopped scallion
  • 2 cloves garlic minced
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. balsamic vinegar
  • 2 tsp. dried basil, or 1/4 cup fresh, finely chopped

Method

  • In a large non stick skillet at medium heat, warm the olive oil.
  • Add peppers and 2 Tbsp. parsley, scallion and garlic.
  • Saute until vegetables are tender, 4 to 5 minutes.
  • Add shrimp, lemon juice, vinegar and basil.
  • Stir fry one or two minutes.
  • Sprinkle with remaining parsley.
  • Serves 6.
