Ingredients

  • 1/2 c. mayonnaise or salad dressing
  • 1 Tbsp. minced onion
  • 1/4 tsp. salt
  • 1/3 c. fine dried bread crumbs
  • 1/3 c. grated Parmesan cheese
  • 1/2 tsp. dried Italian seasoning
  • 1 zucchini or eggplant, cut in 1/2-inch slices

Method

  • In a small bowl, combine the first 3 ingredients (or can use 1/2 cup Hidden Valley Ranch dressing in place of the 3 ingredients).
  • On a waxed paper, combine next 3 ingredients.
  • Brush both sides of the sliced zucchini with the mayonnaise mixture and coat using crumb mixture.
  • Place in shallow pan or baking sheet. Bake at 425° for 15 to 17 minutes or until browned.
