Ingredients
- 6 c. chopped zucchini
- 1/4 c. chopped onion
- 1 c. shredded, raw carrots
- 1 c. sour cream
- 1 can cream of mushroom soup
- 2 c. Cheddar cheese
- 1 (6 oz.) pkg. Stove Top stuffing
- 1/2 c. butter (1 stick)
Method
- Boil
- zucchini and onion for 5 minutes.
- Mix sour cream and soup.
- Fold in vegetables. Mix butter with stuffing mix. In
- a 3 quart casserole, spread half of the vegetable mixture. Add stuffing
- mixture. Top
- stuffing layer with last half of vegetables.
- Top
- with
- cheese.
- Bake
- at
- 350°
- for
- 25 to 30 minutes.
