Ingredients

  • 6 c. chopped zucchini
  • 1/4 c. chopped onion
  • 1 c. shredded, raw carrots
  • 1 c. sour cream
  • 1 can cream of mushroom soup
  • 2 c. Cheddar cheese
  • 1 (6 oz.) pkg. Stove Top stuffing
  • 1/2 c. butter (1 stick)

Method

  • Boil
  • zucchini and onion for 5 minutes.
  • Mix sour cream and soup.
  • Fold in vegetables. Mix butter with stuffing mix. In
  • a 3 quart casserole, spread half of the vegetable mixture. Add stuffing
  • mixture. Top
  • stuffing layer with last half of vegetables.
  • Top
  • with
  • cheese.
  • Bake
  • at
  • 350°
  • for
  • 25 to 30 minutes.
