Ingredients
- 2 lb. onions, chopped
- 2 Tbsp. fat
- 1 small tomato, chopped
- 1 small green pepper, chopped
- 2 large raw potatoes, diced
- 1 1/2 lb. chuck beef, cubed
- 1 tsp. tomato paste
- 2 tsp. salt
- 1 c. boiling water
- 1 Tbsp. paprika
Method
- In a large pot, cook onions in fat until golden.
- Add tomato, pepper, paprika, beef, tomato paste and salt.
- Cook, stirring over medium heat, until beef loses its redness.
- Reduce heat; add water. Cover and simmer for 1 1/2 hours.
- Remove meat.
- Strain gravy, then return to pan with meat.
- Add potatoes and simmer until tender, about 1 hour.
- Makes 4 to 5 servings.
