Ingredients

  • 2 lb. onions, chopped
  • 2 Tbsp. fat
  • 1 small tomato, chopped
  • 1 small green pepper, chopped
  • 2 large raw potatoes, diced
  • 1 1/2 lb. chuck beef, cubed
  • 1 tsp. tomato paste
  • 2 tsp. salt
  • 1 c. boiling water
  • 1 Tbsp. paprika

Method

  • In a large pot, cook onions in fat until golden.
  • Add tomato, pepper, paprika, beef, tomato paste and salt.
  • Cook, stirring over medium heat, until beef loses its redness.
  • Reduce heat; add water. Cover and simmer for 1 1/2 hours.
  • Remove meat.
  • Strain gravy, then return to pan with meat.
  • Add potatoes and simmer until tender, about 1 hour.
  • Makes 4 to 5 servings.
