Ingredients

  • 12 lb pecans
  • 1 lb spinach, torn or
  • 1 lb Baby Spinach
  • 1 pint strawberry, halved
  • 13 cup red wine vinegar
  • 1 teaspoon salt
  • 12 cup olive oil
  • 1 teaspoon dry mustard
  • 12 cup sugar
  • 1 12 teaspoons onions, minced
  • 12 teaspoon poppy seed (optional)

Method

  • Brown pecans on a butted baking sheet at 350 degrees for 10 minutes.
  • In a large serving bowl, mix together spinach and strawberries.
  • In a separate bowl, blend together vinegar, salt, oil, mustard, sugar, onion and poppy seeds.
  • (I use my Vitamix blender- it blends so smoothly).
  • When you are ready to serve, toss in pecans.
  • Gently toss dressing into spinach and strawberries before serving.
