Ingredients

  • 3 c. all-purpose flour, sifted
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 1/2 c. vegetable oil
  • 1 1/2 tsp. vanilla
  • 1 tsp. baking soda
  • 2 c. diced bananas
  • 1 (8 oz.) can crushed pineapple (with juice)
  • 3 eggs

Method

  • Stir together flour, baking soda, cinnamon, sugar and salt. Add the diced bananas to the dry ingredients along with the oil, crushed pineapple with its juice, vanilla and eggs.
  • Stir to blend, but do not beat.
  • Pour into greased Bundt pan and bake in preheated oven at 350° for 1 hour and 10 minutes or until cake tests done. When cooled, remove and drizzle with Butter Rum Icing or frost as desired.
