Ingredients

  • 2 Tbsp. vegetable oil
  • 8 (1-inch thick) loin pork chops
  • 1 medium-sized onion, sliced
  • 1 (8 oz.) can sliced water chestnuts, drained
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1/4 c. soy sauce
  • 1/4 c. water
  • 2 Tbsp. lemon juice
  • 1 Tbsp. minced ginger or 1/2 tsp. ground ginger
  • 1 garlic clove, minced or 1/4 tsp. garlic powder

Method

  • Preheat oven to 350°. In a skillet, brown chops in oil and place in a rectangular casserole. Cover with onion slices, water chestnuts and mushrooms. Combine remaining ingredients and pour over chops. Cover and bake 45 to 60 minutes or until chops are tender. Makes 6 to 8 servings.
