Ingredients
- 2 lb. (900 g) baby carrots King Sooper's 1 lb For $0.99 thru 02/09
- 1/4 cup orange juice
- 1 Tbsp. brown sugar
- 2 Tbsp. honey
- 3 Tbsp. (about 1/2 of 85-g pkg.) Jell-O Orange Jelly Powder
- 1 Tbsp. butter
- 1 Tbsp. finely chopped fresh parsley
Method
- Cook carrots in boiling water in large saucepan 8 to 10 min.
- or until crisp-tender.
- Drain, reserving 1/4 cup cooking water.
- Pour reserved cooking water into large skillet.
- Add orange juice, sugar and honey; stir.
- Bring just to boil, stirring occasionally.
- Add dry jelly powder; stir 2 min.
- until completely dissolved.
- Add butter and carrots; cook 2 to 3 min.
- or until carrots are glazed and tender, stirring frequently.
- Use slotted spoon to transfer carrots to platter; top with sauce.
- Sprinkle with parsley.
