Ingredients

  • 2 lb. (900 g) baby carrots King Sooper's 1 lb For $0.99 thru 02/09
  • 1/4 cup orange juice
  • 1 Tbsp. brown sugar
  • 2 Tbsp. honey
  • 3 Tbsp. (about 1/2 of 85-g pkg.) Jell-O Orange Jelly Powder
  • 1 Tbsp. butter
  • 1 Tbsp. finely chopped fresh parsley

Method

  • Cook carrots in boiling water in large saucepan 8 to 10 min.
  • or until crisp-tender.
  • Drain, reserving 1/4 cup cooking water.
  • Pour reserved cooking water into large skillet.
  • Add orange juice, sugar and honey; stir.
  • Bring just to boil, stirring occasionally.
  • Add dry jelly powder; stir 2 min.
  • until completely dissolved.
  • Add butter and carrots; cook 2 to 3 min.
  • or until carrots are glazed and tender, stirring frequently.
  • Use slotted spoon to transfer carrots to platter; top with sauce.
  • Sprinkle with parsley.
