Ingredients

  • 6 Large eggs, well beaten
  • 2 1/2 c. sugar
  • 1 pkg. Junket ice cream mix, optional
  • 1 lg. can evaporated lowfat milk
  • 1 teaspoon vanilla
  • Approx. 1 1/2 quart. lowfat milk
  • Desired flavoring

Method

  • Fold in order given, beating thoroughly.
  • Add in desired flavoring mix and mix well.
  • Finish filling bowl with regular lowfat milk and stir well.
  • Pour into freezer can and finish filling can with regular lowfat milk being sure to leave about 2 inches at the top to allow for expansion.
  • Freeze.
  • Using 1 1/2 gallon electric freezer, I use about 3/4 carton Morton table salt and plenty of ice.
  • Later pour off the water and pack with more salt and ice.
  • Flavoring suggestions: Adapt to freezer size and individual preference.
  • Banana Nut: about 3 mashed bananas, 1/2 to 1 c. minced pecans, vanilla Junket; Pineapple: two flat cans crushed pineapple and juice, Vanilla Junket; Strawberry: 1 or possibly 2 package frzn strawberries, thawed mashed, red food coloring, strawberry or possibly vanilla Junket; Chocolate: use chocolate Junket; Chocolate chip: grate up large Hershey bar; Peach: fresh or possibly frzn peaches, mashed.
