Ingredients

  • 1 whole organic chicken
  • 2 Tbsp olive oil
  • 2 sheets aluminum foil

Method

  • Place oven on high broil.
  • In a casserole dish or brownie pan, place one sheet of aluminum foil in the bottom.
  • Take the chicken and remove bag of gizzards and wash it thoroghly with lukewarm water.
  • Place chicken breast side up in pan.
  • Cover chicken with the olive oil using a basting brush.
  • Place second piece of aluminum foil over the chicken.
  • Put chicken in oven and broil for 1 hour.
  • Remove top sheet of aluminum foil and place back in oven for another 25 minutes - depending on your oven.
  • Chicken should register 165 degrees F in the breast and at least 175 degrees F in the legs and thighs.
  • Use a meat thermometer to check.
