Ingredients

  • 1 cup milk
  • 1/2 cup matzo meal
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1-1/2 cups BREAKSTONE'S Cottage Cheese
  • 2 Tbsp. sugar
  • 1 tsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
  • margarine
  • 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
  • 1/4 cup

Method

  • Beat milk, matzo meal, eggs and salt with electric mixer on medium speed until smooth.
  • Let stand 30 minutes.
  • Using 2 tablespoons batter for each blintz, cook in hot, lightly greased 8-inch skillet or crepe pan on one side only until lightly browned.
  • Mix cottage cheese, sugar and juice.
  • Place 2 rounded tablespoons cottage cheese mixture on browned side of each blintz.
  • Roll up, folding sides toward center.
  • Brown blintzes on both sides in margarine in large skillet.
  • Top with combined sour cream and preserves.
