Ingredients

  • 1/4 cup butter
  • 1/3 cup all purpose flour
  • 1 cup milk
  • 3 ounces mozzarella grated
  • 3 1/2 ounces ham chopped
  • 2 scallions chopped
  • 2 tablespoons parsley chopped
  • 1/2 cup all-purpose flour seasoned
  • 2 medium eggs lightly beaten
  • 1 2/3 cups breadcrumbs
  • canola oil for deep frying
  • sweet chili sauce to serve
  • salad to serve

Method

  • Melt butter in a medium saucepan over medium heat. Add flour and cook, stirring, for 1 min. Remove from heat and whisk in milk. Return to heat and cook, stirring, until the mixture boils and thickens. Reduce heat to low and simmer for 1 min.
  • Transfer to a bowl and stir in mozzarella, ham, scallions and parsley. Chill until firm enough to handle.
  • Shape into 10 oval croquette shapes. Dust in seasoned flour, coat in eggs and dip in breadcrumbs to coat. Chill for 1 hour.
  • Heat 4 inches of oil in a large saucepan on medium, until a cube of bread sizzles as soon as it is added.
  • Add 5 croquettes and cook, turning, for 2-3 mins, until golden. Drain on paper towel. Repeat with remaining croquettes. Serve with sweet chili sauce and salad.
