- 1/4 cup butter
- 1/3 cup all purpose flour
- 1 cup milk
- 3 ounces mozzarella grated
- 3 1/2 ounces ham chopped
- 2 scallions chopped
- 2 tablespoons parsley chopped
- 1/2 cup all-purpose flour seasoned
- 2 medium eggs lightly beaten
- 1 2/3 cups breadcrumbs
- canola oil for deep frying
- sweet chili sauce to serve
- salad to serve
Method
- Melt butter in a medium saucepan over medium heat. Add flour and cook, stirring, for 1 min. Remove from heat and whisk in milk. Return to heat and cook, stirring, until the mixture boils and thickens. Reduce heat to low and simmer for 1 min.
- Transfer to a bowl and stir in mozzarella, ham, scallions and parsley. Chill until firm enough to handle.
- Shape into 10 oval croquette shapes. Dust in seasoned flour, coat in eggs and dip in breadcrumbs to coat. Chill for 1 hour.
- Heat 4 inches of oil in a large saucepan on medium, until a cube of bread sizzles as soon as it is added.
- Add 5 croquettes and cook, turning, for 2-3 mins, until golden. Drain on paper towel. Repeat with remaining croquettes. Serve with sweet chili sauce and salad.
