Ingredients
- 1 c. loosely packed basil leaves
- 1 garlic clove, peeled
- 1/4 c. pine nuts
- 2 Tbsp. grated Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/3 c. plus 2 Tbsp. olive oil
- 4 small halibut steaks (about 6 oz. each)
Method
- To make pesto, in bowl of food processor combine basil, garlic, pine nuts, Parmesan cheese, 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Process until smooth.
- With the machine running, slowly pour in 1/3 cup oil.
- Transfer pesto to a small bowl; cover and set aside at room temperature.
