Ingredients

  • 1 c. loosely packed basil leaves
  • 1 garlic clove, peeled
  • 1/4 c. pine nuts
  • 2 Tbsp. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/3 c. plus 2 Tbsp. olive oil
  • 4 small halibut steaks (about 6 oz. each)

Method

  • To make pesto, in bowl of food processor combine basil, garlic, pine nuts, Parmesan cheese, 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Process until smooth.
  • With the machine running, slowly pour in 1/3 cup oil.
  • Transfer pesto to a small bowl; cover and set aside at room temperature.
