Ingredients

  • 4 qt. tomatoes
  • 4 qt. chopped apples
  • 2 lb. brown sugar
  • 1 tsp. salt
  • 1/2 c. vinegar
  • 1 Tbsp. cassia (optional)
  • 1 Tbsp. cloves
  • 1 Tbsp. allspice
  • 1 lb. salt pork
  • 2 lb. raisins
  • 1 lb. currants
  • 1/2 citron (optional)

Method

  • Chop up
  • tomatoes
  • in
  • food processor. Drain juice and cover with cold
  • water.
  • Cook 1/2 hour after tomatoes begin to boil. Drain and
  • add
  • 4 quarts chopped apples, 2 pounds brown sugar, salt, vinegar, cassia, cloves, allspice, salt pork (cut up), raisins, currants and citron.
  • Cook slowly, 3 to 4 hours, until thick.
