Ingredients
- 3 Tbsp. vegetable oil
- 6 small zucchini, sliced
- 1 Vidalia onion, sliced
- 1 (14 1/2 oz.) can stewed tomatoes, drained
- 2 Tbsp. Italian dressing
- salt and pepper to taste
- 1/2 c. Parmesan cheese, grated
Method
- Heat oil in large skillet or wok.
- Add zucchini and onion. Saute until tender.
- Add other ingredients.
- Cover and simmer 10 minutes.
- Stir occasionally.
- Sprinkle with Parmesan before serving.
