Ingredients

  • 1 1/2 lb. diced chicken or 1 1/2 lb. ground beef
  • 1 can Ro-Tel tomatoes and green chilies
  • 1 can Herdez green chili sauce
  • 1 doz. flour tortillas
  • 2 Tbsp. flour
  • 2 Tbsp. margarine
  • 3 c. milk
  • 1/2 c. cooking oil
  • 1 Tbsp. chicken stock
  • 1 lb. grated Monterey Jack cheese

Method

  • Cook chicken in a light amount of oil or chicken stock until it changes color. Drain liquid or oil and put back in pan.
  • Now add Ro-Tel and cook chicken until nice and tender.
  • The ground beef will be similar except let cook in its own juice until nice and brown.
  • Drain.
  • Add Ro-Tel and cook a few minutes.
