Ingredients
- 2 lb. boneless chicken breasts
- 4 oz. Monterey Jack cheese, cut into 6 slices
- 1 (4 oz.) can diced green chiles, drained
- 2 c. crushed Cheddar cheese crackers
- 1 pkg. taco seasoning mix
Method
- Place chicken on waxed paper and pound to flatten.
- Place one slice of Monterey Jack and 1 tablespoon of chiles on each breast; wrap breasts around filling and secure with a toothpick.
