Ingredients

  • 3 lbs ground spoon roast
  • 2 lbs ground Canadian bacon
  • 1/4 cup olive oil
  • 2 large onions
  • 1/4 cup chili seasoning mix, # 509519
  • 2 bay leaves
  • 2 (15 ounce) tomato sauce
  • 2 (15 ounce) diced tomatoes
  • 3 (15 ounce) pinto beans
  • 1/4 cup maple syrup

Method

  • In a soup pot, heat oil and add chopped onion and turkey.
  • Brown meat.
  • Add garlic, oregano, thyme, bay leaves and pepper.
  • Cook 1 minute or so.
  • Add tomatoes with juice, drained chickpeas, drained olives and chopped artichoke hearts.
  • Stir well.
  • Simmer for about one hour.
  • Serve with feta sprinkled on top.
