Ingredients

  • 8 oz. elbow macaroni, cooked and drained
  • 1 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1/3 cup chopped onion
  • 3/4 cup mayonnaise
  • 2 Tbsp. apple cider vinegar
  • 1 Tbsp. prepared mustard
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/4 tsp. ground pepper

Method

  • Mix the macaroni, celery, bell peppers and onions in a large bowl.
  • Whisk together the mayonnaise, vinegar, mustard, sugar, salt and pepper to make a smooth dressing.
  • Pour dressing over the vegetables, mix well and refrigerate.
  • Makes about 5 cups.
