Ingredients
- 13 cup extra virgin olive oil
- 1 large onion, sliced thin
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- salt
- pepper
- 3 -4 lbs chicken pieces
- 2 lemons, sliced
- 13 cup black olives or 13 cup green olives, chopped
- 1 sprig fresh rosemary
Method
- Remove seeds from lemons.
- If using chicken breasts, cut each into thirds.
- In large pot heat oil, add chicken and lightly brown.
- Add remaining ingredients, stir to coat.
- Cover and simmer 1 1/2 - 2 hours.
- Remove rosemary and serve.
