Ingredients

  • 1 1/2 c. soft butter
  • 1/2 c. oil
  • 1 3/4 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 c. buttermilk
  • 2 1/2 c. flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 4 Tbsp. cocoa
  • 1 tsp. baking soda
  • 2 c. raw grated zucchini
  • 1/4 c. chocolate chips

Method

  • Cream butter, oil and sugar in large mixing bowl.
  • Add eggs, vanilla and buttermilk.
  • Beat.
  • Mix together flour, baking powder, cinnamon, cloves, cocoa and baking soda.
  • Add to creamed mixture. Beat well.
  • Stir in zucchini.
  • Pour into greased and floured 13 x 9 x 2-inch pan.
  • Sprinkle top with chocolate chips.
  • Bake at 325° for 40 to 45 minutes.
