Ingredients

  • 1 c. scalded milk
  • 1/3 c. sugar
  • 1 tsp. salt
  • 1/3 c. margarine
  • 1 egg
  • 1/2 c. mashed potatoes
  • 1 pkg. dry yeast
  • 1/4 c. warm water (110~)
  • 1/4 tsp. sugar (let stand 5 minutes)
  • 3 1/4 c. flour or more if sticky

Method

  • Scald milk; add margarine, mashed potatoes and egg (I use blender).
  • Add sugar, salt and yeast mixture.
  • Beat in 1 1/2 cups of flour.
  • Add rest of flour.
  • Knead well.
  • Let rise until double. Can punch down and let rise again if you have time.
  • Form in small balls and dip into melted shortening and place in greased 9 x 13-inch pan.
  • Let rise at least 1 hour in warm place.
  • Bake in 350° oven for 20 minutes, until golden.
  • Makes 20 to 24 rolls.
