Ingredients
- 1 c. scalded milk
- 1/3 c. sugar
- 1 tsp. salt
- 1/3 c. margarine
- 1 egg
- 1/2 c. mashed potatoes
- 1 pkg. dry yeast
- 1/4 c. warm water (110~)
- 1/4 tsp. sugar (let stand 5 minutes)
- 3 1/4 c. flour or more if sticky
Method
- Scald milk; add margarine, mashed potatoes and egg (I use blender).
- Add sugar, salt and yeast mixture.
- Beat in 1 1/2 cups of flour.
- Add rest of flour.
- Knead well.
- Let rise until double. Can punch down and let rise again if you have time.
- Form in small balls and dip into melted shortening and place in greased 9 x 13-inch pan.
- Let rise at least 1 hour in warm place.
- Bake in 350° oven for 20 minutes, until golden.
- Makes 20 to 24 rolls.
