Ingredients

  • 1 can black bean, drained
  • 1 can white kernel corn, drained
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 large tomato, deseeded & diced
  • 1 small onion, diced
  • cilantro, to taste, chopped
  • 1 avocado (optional), diced
  • 8 oz. Mexican Cheese (Jalapeno Havarti, Pepper Jack), shredded
  • tortilla chips

Method

  • Combine all ingredients, except avocado, in saucepan. Heat over medium heat until cheese is melted; stir occasionally. Add avocado. Serve immediately with tortilla chips.
