Ingredients

  • 2 lb. yellow pear tomatoes
  • boiling water
  • 3 c. sugar
  • juice of 2 oranges
  • grated rind of 1 orange
  • grated rind of 1 lemon
  • 2 lemons, thinly sliced

Method

  • Select
  • fully ripe tomatoes;
  • cover with boiling water. Let stand a
  • few
  • seconds, then drain and dip into cold water. Peel carefully
  • and
  • place in layers in bowl, sprinkling sugar over each
  • layer.
  • Cover
  • and
  • let
  • stand
  • overnight
  • (keep in refrigerator).
  • Drain
  • off juice and sugar and heat to boiling with orange
  • juice,
  • orange
  • rind
  • and lemon rind.
  • Boil until syrup spins
  • thread.
  • Add tomatoes and sliced lemons.
  • Cook until syrup
  • is thick.
  • Pour into sterile jelly jars and seal. Place in boiling water bath for 25 minutes.
