Ingredients
- 2-inch piece ginger
- 1 clove garlic
- 3 Tbsp. soy sauce
- 1 Tbsp. sesame oil
- 2 tsp. rice vinegar
- 3 lb. chicken
Method
- Heat
- oven to 375°.
- Peel ginger and grate 1 tablespoon minced garlic.
- Combine grated ginger, the garlic, soy sauce, sesame oil
- and
- vinegar. Rub
- chicken
- cavity
- with about 1 tablespoon of this mixture.
- Slice remaining ginger and put in cavity.
- Put chicken
- on a rack in a roasting pan and bake 30 minutes.
- Baste with ginger mixture.
- Continue baking chicken, basting
- every
- 15 minutes,
- until
- juices run clear when the inner
- thigh
- is pierced, about 45 minutes longer.
- Stir-fried vegetables
- and either rice or noodles complement the chicken well.
