Ingredients

  • 2-inch piece ginger
  • 1 clove garlic
  • 3 Tbsp. soy sauce
  • 1 Tbsp. sesame oil
  • 2 tsp. rice vinegar
  • 3 lb. chicken

Method

  • Heat
  • oven to 375°.
  • Peel ginger and grate 1 tablespoon minced garlic.
  • Combine grated ginger, the garlic, soy sauce, sesame oil
  • and
  • vinegar. Rub
  • chicken
  • cavity
  • with about 1 tablespoon of this mixture.
  • Slice remaining ginger and put in cavity.
  • Put chicken
  • on a rack in a roasting pan and bake 30 minutes.
  • Baste with ginger mixture.
  • Continue baking chicken, basting
  • every
  • 15 minutes,
  • until
  • juices run clear when the inner
  • thigh
  • is pierced, about 45 minutes longer.
  • Stir-fried vegetables
  • and either rice or noodles complement the chicken well.
