Ingredients

  • 1/2 cup self-rising flour
  • 4 tbsp butter, chilled, chopped
  • 1/2 cup dried apricots, chopped
  • 1/3 cup granulated sugar
  • 1/4 cup macadamia nuts, chopped
  • 1/2 cup milk
  • 1 None egg
  • 1/2 cup apricot jam, plus extra jam to serve
  • None None heavy cream, to serve

Method

  • Preheat oven to 425°F. Lightly grease a baking tray.
  • Sift flour into a large bowl. Cut in butter until mixture resembles coarse breadcrumbs. Add apricots, sugar and nuts. Mix in milk and eggs until just combined. Turn out onto a lightly floured surface and knead lightly. Press into a rectangle about 3/4 inch thick. Spread jam over top then roll up tightly from long side. Cut into 9 slices. Arrange on prepared tray. Bake for 12-15 mins, or until golden brown. Let cool on a wire rack.
