Ingredients
- 1 c. sugar
- 1 stick or oleo or butter
- 1 egg
- 4 tsp. cinnamon
- 2 tsp. nutmeg
- 1 tsp. soda dissolved in buttermilk
- 1 c. buttermilk
- 1 c. blackberry jam with seeds or seedless
- 2 c. flour
Method
- Combine sugar and oleo and beat well.
- Add egg, cinnamon, nutmeg and beat well. Gradually add flour and buttermilk with soda dissolved in buttermilk and beat.
- Then add jam and mix through batter well.
- Grease pan.
- Pour in mixture and bake at 350° for about 45 minutes.
- Remove from oven and cool for 10 minutes, then turn out on cake plate and finish cooling before icing.
- Makes 2 layers or 1 oblong cake.
- Ice with caramel icing.
