Ingredients

  • 150g OREO* Original Cookies , crushed
  • 3/4 cup sugar
  • 1/2 cup self raising flour
  • 1/2 teaspoon salt
  • 3 eggs, separated
  • 100g (1/2 cup) dark chocolate, melted
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 2 cups cream, whipped
  • 2 tablespoons icing sugar
  • drinking chocolate, to serve

Method

  • Combine crushed Oreo* cookies, sugar, flour, and salt; set aside.
  • Beat the egg yolks with an electric mixer on high until light and fluffy.
  • Combine the melted chocolate, water and vanilla.
  • Fold in flour and chocolate mixes into the beaten yolks.
  • Beat the egg whites until stiff, gently fold into batter.
  • Spoon the batter into 2 x 20cm greased and lined cake tins and bake at 180C for 25 minutes or until a skewer inserted in the centre comes out clean.
  • Combine the whipped cream and icing sugar.
  • Spread the cream over one layer, top with the second cake and spread cream over top.
  • Sprinkle with drinking chocolate to serve.
