- 1 chicken, stewed and boned
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can Ro-Tel tomatoes with chilies
- 1 can chicken stock, measured with can using stock from stewed chicken
- 2 Tbsp. onion, chopped
- 2 c. Cheddar cheese, grated
- 1 doz. tortillas
- 1 large can black pitted olives
Method
- Combine all ingredients except tortillas and cheese.
- Line a 9 x 13-inch baking dish with tortillas.
- Cut remaining tortillas in half.
- Layer chicken mixture, cut tortillas and cheese and repeat. Cover and bake at 350°
- for 40 minutes.
- Remove foil last 10 minutes.
