Ingredients

  • 1 chicken, stewed and boned
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can Ro-Tel tomatoes with chilies
  • 1 can chicken stock, measured with can using stock from stewed chicken
  • 2 Tbsp. onion, chopped
  • 2 c. Cheddar cheese, grated
  • 1 doz. tortillas
  • 1 large can black pitted olives

Method

  • Combine all ingredients except tortillas and cheese.
  • Line a 9 x 13-inch baking dish with tortillas.
  • Cut remaining tortillas in half.
  • Layer chicken mixture, cut tortillas and cheese and repeat. Cover and bake at 350°
  • for 40 minutes.
  • Remove foil last 10 minutes.
